3. Asparagus Tomato Salad

Potato Salad w/Turkey Bacon & Blue Cheese
Ingredients
Preparation
6-8 small potatoes, baked and cubed
3-4 slices crispy turkey bacon, cubed
1/4 cup blue cheese, crumbled
3/4-1 cup Vegannaise
1/4 green onions, diced
salt & pepper to taste
Place everything in a large bowl and toss gently together.
Asparagus Tomato Salad

Salad Ingredients

Preparation
1/2 bunch asparagus spears, cut and blanched
1/4 red onion, thinly sliced
1/2 cup cherry tomatoes, halved
Combine in a large bowl
Dressing Ingredients
Dressing Preparation
3 T. red wine vinegar
3 T. Olive oil
2 t. honey
2 T. fresh Tarragon, chopped
Whisk dressing together in a small bowl. Pour dressing over Asparagus Tomato Salad and gently toss. Add salt & pepper to taste.
Tofu Poke w/Sea Asparagus
Ingredients
Preparation
3 packages Broiled Tofu or Atsu Age, cubed
1/2 onion thinly sliced
1/2 cup Bragg’s Liquid Aminos
2 T. Sesame Oil
1 T. Chili Sauce
1/4 cup green onions, diced
1 T. Furikake
1/4 cup Sea Asparagus, rough chop
Combine in a large bowl and toss gently so the tofu doesn’t break apart.
